1. Mortar and Pestle Basil Pesto

The traditional way of making pesto is by using a mortar and pestle. Way before food processors entered the market; people all over the world were enjoying delicious pesto. Of course you can use a food processor to whip up a quick pesto but why not try doing it with a pestle and mortar? Let us know what one tastes better!

This recipe from the Reluctant Gourmet is for a pesto sauce that you can use on pasta, in soups or dolloped onto a hunk of freshly baked bread.

Ingredients

  • 3 cloves of garlic – peeled and roughly chopped
  • 2 cups of fresh basil – leaves only
  • 3 tablespoons of pine nuts
  • A dash of salt and pepper
  • 1/2 cup of extra virgin olive oil
  • 1/2 cup grated Parmesan cheese

Directions

1) Add basil, garlic, salt and pine nuts to your mortar and pestle. Grind them into a paste.
2) Add your parmesan to the mix and pound it in until thoroughly combined.
3) Whisk in the oil until you achieve your desired consistency.

This recipe over on the Taste Food Blog is a classic guacamole that can be prepared and served in your mortar and pestle. It’s just perfect with crunchy tortilla chips!

Ingredients

Ingredients

  • 2 cups of pitted Kalamata olives – finely chopped
  • 2 tablespoons of capers – finely chopped
  • 1 clove of garlic – peeled
  • 2 tablespoons of olive oil
  • Pepper (to taste)

Directions

1) Mash the olives with the garlic and capers.
2) When you have reached desired consistency, whisk in the olive oil and a dash of pepper.

The perfect tacos rely upon a delicious taco seasoning. Instead of buying a store bought taco seasoning; make your own using your pestle and mortar! This recipe is so easy to do and you probably have most of the spices in your cupboard already.

Ingredients

  • 1 tablespoon of chili powder
  • 1 1/2 teaspoons of roasted and ground cumin seeds,
  • 1 teaspoon of sea salt
  • 1 teaspoon of black peppercorns
  • 1/2 teaspoon of paprika
  • 1/4 teaspoon of garlic powder
  • 1/4 teaspoon of onion powder
  • 1/4 teaspoon of crushed red pepper flakes
  • 1/4 teaspoon of dried oregano

Directions

1) Put everything in your mortar and pestle and grind until combined.

  • 1/3 cup of dried Thai chilies
  • 1 Tablespoon plus an extra 1 teaspoon of coarse sea salt
  • 200g of garlic cloves (peeled)
  • 1 stalk of lemongrass – lower part sliced thinly across
  • 3/4 inch of fresh turmeric root of 1/2 tsp dried turmeric root
  • 1 tablespoon of shrimp paste

Directions

1) Pulverise dried chilies, sea salt, garlic, lemongrass and turmeric until it turns into a fine paste.
2) Blend the shrimp paste in with the back of a spoon.
